Types of Pasta Salad

If you’re looking for an economical side dish to bring to an office party or to a pot luck, you can’t miss pasta salad. They’re inexpensive and non-fussy. As long as you have a refrigerator or a cooler nearby, you will be fine. Pasta salads are also great at home. They whip up easily enough can be preserved in the refrigerator for a couple of days and also make fine leftovers. If you’re looking for a little nibble, pasta salad makes a nutritious snack. Brown baggers may want to pack a container of salad with their sandwiches. Just make sure to stick in one of those reusable ice’s.

Veggies and Pasta Salad

For a low fat version, use reduced fat cottage cheese and mayonnaise


  • 1/2 lb elbow macaroni, cooked and drained
  • 1/2 c. cottage cheese
  • 1/4 c. mayonnaise
  • 1 T. cider vinegar
  • 1/4 t. garlic salt
  • 1/2 t. pepper
  • 1 c. broccoli florets
  • 1 c. chopped tomatoes
  • 1/2 c. chopped cucumber
  • 1/2 c. chopped celery
  • 2 green onions, chopped
  • 1 dill pepper, diced

Puree the cottage cheese, mayonnaise, cider vinegar, garlic salt, pepper, and dill pepper. Mix together the pasta, broccoli, tomatoes, cucumber, celery, and onions. Stir in the cheese dressing. Chill for at least a half hour.

South of the Border Pasta Salad

This could easily be a main dish.

South of the Border Pasta Salad


  • 1/2 lb small pasta shells, cooked and drained
  • 1 c. corn kernels
  • 3 green onions, chopped
  • 1 c. chopped bell pepper
  • 1 can (15 oz) black beans
  • 1 c. chopped tomatoes
  • 1/4 c. sliced black olives
  • 1 T. olive oil
  • 3 T. lime juice
  • 2 t. cumin
  • 1/2 t. black pepper
  • Grated cheddar cheese
  • salsa

While the pasta is still hot, stir in the corn. Mix together the onions, pepper, beans, tomatoes, olives, oil, juice, cumin, and black pepper. Combine the pasta with the rest of the salad. Chill and serve with cheese and salsa.

Basil and Tomato Pasta Salad

Basil and tomatoes were meant for each other. Try this when they are in season.


  • 1/2 lb macaroni shells, cooked and drained
  • 2 tomatoes, chopped
  • 2 green onions, chopped
  • 2 cloves garlic, chopped
  • 1/4 c. fresh parsley, chopped
  • 2 T. olive oil
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 c. fresh basil, chopped (may be increased to 1/2 c. for basil lovers)

Mix together all of the ingredients. Chill for at least 2 hours.

Pasta and Garbanzo Bean Salad

I make this a lot because I normally have all the ingredients on hand


  • 1/2 lb macaroni shells, cooked and drained
  • 1 can (14 oz) garbanzo beans, drained
  • 4 oz sliced black olives, drained
  • 1 tomato, chopped
  • 1 rib celery, chopped
  • 1/2 bottle of Italian dressing

Mix all of the ingredients. Chill for at least 2 hours.
